I’ll be the first to admit, that I’m not someone that comes up with great recipes. I enjoy the simplicity of cooking. Meats, vegetables, rice, potatoes, oatmeal. That’s my stuff. Baking? Not so much. I’d much rather just go out and buy whatever it is I’ve got the craving for. However, when you’re dieting down to try and make a weight class and you have an insane sweet tooth hit you, it’s more than likely going to require you to get creative, and thus…this was born.
Let’s just get down to the review first:
- These cookies aren’t that big, but what they lack in size they make up for in weight. They are dense and very filling for under 100 calories per cookie. I’m sure if you are baking savvy, you can find a way to increase the size if you really wanted to.
- At only 90 calories per cookie, you can certainly afford to eat three to four without feeling bad about it.
- The peanut butter taste is amazing!
- They’re quick and pretty simple.
Okay, now for the “how to’s”:
Approximate Prep Time: 8 minutes
Approximate Cooking/Baking Time: 10 minutes
Total time: 18 minutes (likely even less)
Ingredients
- 2/3 scoop of Chocolate Whey Protein Isolate (I use NutraBio’s Chocolate WPI)
- 2 TBSP of Natural Peanut Butter (make sure the only ingredient is peanuts!)
- 1/4 cup of almond flour
- 2 TBSP of coconut flour
- 1/4 cup of coconut/almond milk (I used coconut creamer because I was out, but it worked very well)
- 2-3 drops of liquid stevia (optional, but recommended)
Directions
- Preheat oven to 340 F.
- Mix all the ingredients to a medium sized bowl. You should get a dough-like texture. You might find that based upon your peanut butter, you need to add in just a little bit of water if they are too “sticky”.
- Grab a chunk of the dough-like batter, and begin to roll into miniature balls. You’ll want to be able to make approximately six balls, so adjust accordingly.
- After you’ve got the balls on your cookie tray (or muffin pan that I used for simplicity), just flatten out with your hands or a flat surface.
- Place the dough in the oven for approximately 5-10 minutes. You’ll want to keep a watchful eye on them as to not burn them.
- Set them aside and let them cool. If you’re antsy like me, cover with some sugar-free chocolate syrup.
- ENJOY!

At the end of the day, if you’ve got a major sweet tooth and you’re dieting, these are a damn good fit for just about any nutritional approach. Needless to say, mine didn’t last very long.
